conditions have become the standard for modern wine cellars: 55-58 degrees and 55-65% relative humidity. Our wine cellar refrigeration systems maintain these ideal conditions, gracefully aging your wines, then keeping them at their peak for years to come.
EXTREMES - Nothing is more detrimental to your wine than extreme heat or cold.
DAILY CHANGES- As the temperature rises, your bottle of wine expands; but, the wine expands up to seven times more than the glass bottle. This process creates pressure,
which forces wine out of the bottle. When the bottle cools a vacuum forms, which sucks oxygen rich air into the bottle. Ullage is the oxygen
free air within the bottle. Unregulated, rapid temperature fluctuations prematurely age and deteriorate your wine.
HUMIDITY - 55-65% is the ideal humidity range for stable wine aging. Humidity levels of 80% or higher will
cause mold to form and rot the labels. Lower levels will increase the amount of ullage forming in the bottle and will dry-out the glue beneath
the label.
WINE BREATHES- Wine breathes through the cork and ages in the process. Environmental changes (fluctuations in temperature and humidity) accelerate the aging process. Excessive oxidation causes the wine to become bitter, as it would in a glass overnight. Wine requires oxidation to mature; but, it must be regulated to assure adverse conditions do not affect the aging of your wine. The pace of breathing is faster at higher temperatures and slower at lower temperatures.

I. Types of Cellar Refrigeration
ALL units are mounted through the wall, exhausting into an adjacent room. Size of unit determined by calculating the cubic feet of the room. This unit CANNOT be exhausted outside or into a hot garage. The room where it will be exhausting to must be a conditioned room so that the heat can be dissipated. The amount
of heat exhausted is very similar to that of a large refrigerator or freezer. This unit will keep the room at 55 degrees, and it will provide 55-70 percent humidity. The humidity is created when the air passes over the condensate drain pan, picks up the moisture, and introduces it into the air.
This unit does not require a drain However, there is a hose located underneath the Breezaire that needs to be monitored. In certain conditions, there may be excessive condensation. When this happens,the drain fills up faster that the unit can dispel it into
the air. If not monitored, the drain pan will overflow and leak into the wall.
From a small closet up to a 2,000 cubic feet wine cellar, there is a Breezaire self -contained, through- the-wall refrigeration unit to fit. Breezaire is the oldest and most respected name in wine cellar refrigeration. Standard models and prices are listed below. Electronic units and split systems are also available. The units are mounted in an opening in the cellar wall and exhaust into an adjacent room. All units operate with a 25 degree temperature differential.
